The owner-chef places equal importance on cooking, hospitality and atmosphere and hopes to pass on Japanese culture to the next generation. He also says he fell in love at first sight with this early Showa residence with its inner garden. ‘Mugiuni’ is a colourful dish featuring uni cooked in awabi dashi served with full-bodied hiyamugi. Prices are quite high, but you can enjoy good food while admiring the antique serving dishes.
